There's no problem in landing with a return ticket, i have done that..and i believe many others have done it too.
Keep in mind that the immigration officer needs to be sure that you will remain in canada - at least - till you receive your PR card- otherwise he may not process your PR cards - but in your case the husband will be there to collect it so there is no problem - you can explain that to the officer if asked. You also don't have to bring up the issue that you are going back after one month - only if you are asked.
It is unlikely that you'll receive the PR card in one month, as the current processing time is 63 days (as per cic website below)

It will not be a problem for your husband to pick it up..as it should arrive via mail to his address, but its worth to mention that in some cases - cards could be delayed due to incorrect photo specifications and in this case - your husband would need to resend the photos.
