Job experience letter

Hello dear members hope my message finds you well
I prepared my job experience letter for NOC 4165 (health policy development officer) and I have some queries

1. I made it comprehensive (3 pages). Is it be better to be shorter?
2. What prefix is better to use for my name? Dr. or Ms.? As I am a dentist but I have chosen a non-medical NOC
3. My immigration consultant has adviced me to choose this NOC over dentist NOC since this one is less complicated concerning licensure procedure and job offers. Do you think that his point makes sense?
