You can hypothecate your jewellery for cash and the cash in the Bank can be used to show POF. The visa office later on may require source so keep the documentation of hypothecation / pledge ready. After you get the visa you can sell your jewellery.
Mortgage is only application for immovable property.

Yup.... I do agree with Explorer101.......
Other option is sell jewellery..........ask Buyer to give you a receipt...... But buyer should be taxed for that........remember....... It's always recommended that receipt should be dated before the date of application which you can use as one of source of funds....
