Is this work experience acceptable for 3 years experience?

Job 1 : Aug 24, 2015 - Feb 14, 2016
Job 2 : Feb 22, 2016 - Mar 31, 2018
Job 3: 31 July 2020 - 31 Dec 2020 (expected)

Job 2 had 26 unpaid leaves spread over the 2 years or so time, which isn't mentioned on experience letter but shows up on final pay settlement in pay stubs.

Would this experience be enough to pass the 3 year mark?

You may need a letter of explanation if your unpaid leave lasted very long. For a 2-3 weeks you should be fine not to mention it as long as you were employed full time after that leave. Since your letter of employment doesn't mention those it should be fine. To be on safe side you can wait to gain 3 years 1-2 months before submitting application. The final yearly pay statement should be fine as long as it is not significantly less than pay promised.

Actually its because I am starting a PhD program in Spring 2021, so it would be hard to extend this work experience more ..

If there is some doubts or issues I would rather not work this time and just start PhD right now. (My PhD is from Canada)
