The default for most documents is that if they are in English or French in original, no need to translate. (If dual language and one of those is English or French, also fine). And in such cases, usually just a copy is needed (since all submitted by scans anyway).

For translations, standard for most countries is certified translation + notarized copy. In most cases you can go to a notary or translator and they will know how to take care of both procedures for you. Just tell them it's for the Embassy or Canadian government; in most cases, IRCC accepts what is standard for official translations and notarizations.

Enter the countries involved to see if any special requirements. Some countries will require authentication by government body, most do not.

As for above, you're going to have to look these up yourself (see the link above). But some hint comments that mostly come down to read the instructions:
3) Dont know why death certificate of a parent would be needed. Read the instructions. If not specified that you need it, don't submit it (unless there is some specific reason).
4) Same. Spousal sponsorships usually don't need transcripts etc. Your husband may want to get it to ensure it's available if needed for some reason in Canada, but not for the sponsorship.
5) My personal experience is that IRCC is not very demanding about notarized copies for such simple stuff, just have the translator attach them to the translation.

Again: for authentication, you're going to have to read the instructions specific to these countries.
