There's this part in the IMM5669 form where my wife has to include her education history and the instructions state that she must complete all names in English and her native language, (in her case Chinese), however the character limit for these boxes are very small.

for example, my wife spent two years at the Sichuan University of Science and Engineering or SUSE for short but if she were to put the full name it wouldn't accept it, let alone a second time for the Chinese characters. Would an answer like SUSE University be acceptable?

Also in the section "Type of certificate or diploma used", is it ok to have answers like Bachelor's Degree or Diploma? Is there a better way to answer that box?

Just shorten however you can so that it's still identifiable. Education is mostly for background check and statistics in a spousal sponsorship, so it's not material.

I see, that's good to know but what about Personal History?
One of the companies my wife worked at is called "Sichuan Jiameirui Enterprise Management Co. Ltd." and that's also too long for the box. I figured those parts are even more important that the schools she went too, how would she handle those parts?

Same. Just use your judgment. If you think it's important, you can add a letter of explanation, where you give the same info but provide full name.
