I have a doubt about the " 1 year continuous work experience" requiered by express entry

Basically, I started to work on my first job in October 2016 and I quit on the third week of September 2017, then I looked for a job and started to work on the new one around October 22nd 2017, I also quitted that job on august 2018 to study an MSc on the UK, I finished the master on September 2019 and then stayed on the UK to look for a permanent job until January 2020, so I got nothing and went back to my country (Mexico) because of COVID I couldn't find a job until October 2020 and I have been working there eversince, so my question is if I can apply for Express Entry in Canada and claim 2 years of work experience or if I need to wait until October this 2021 to apply? All my jobs have been in mechanical engineer positions, I reckon it is NOC A just don't remember the number.

The breakdown of the dates is as follows:

  • First Job October 2016 - September 2017 (11 months)
  • Second Job October 2017 - August 2018 (10 months)
  • MSc in the UK September 2018- September 2019
  • Stayed in the UK looking for a job, September 2019 - January 2020
  • Looked for a job in my country, February 2020-October 2020
  • Third and current Job October 2020 - Current Job
