I am Indian citizen currently working in Saudi Arabia since last 15 years
I would like to apply visitor visa for Canada for me & my spouse from Mumbai,India as i am going there for my annual vacation next month.
Can I apply or submit my Visitor Visa application online to Vfs global ,India?
My current country residence would be Saudi Arabia or India?
Police clearance certificate required?
How much funds to be shown for 10 days tour to Canada? For me & my spouse together?

Yes, but how long is your vacation? Processing days in India and Saudi Arabia are different As to date it says 13 days in India and 31 days in Saudi Arabia. These are estimated days and can change.

Depends on where you will stay and what activities you plan to do.
If you google this question, a website suggests that "Midrange travelers should budget between $100 and $250, and high-end travelers should plan on spending at least $250 per day, which includes a night at an appropriately priced hotel or resort, most meals out and attractions."

Both. Flight itinerary, you don't need to purchase a ticket yet. You can get a flight itinerary from Expedia (or similar sites) or screenshot the flights you want to take from an airline's website. The other is the day to day itinerary where in you will enumerate what you will do and the places/attractions you will visit.
Example:
Day 1 Arrive in Pearson Airport
Day 2- 4 Sleep to overcome jet lag
Day 5 - 7 Visit Niagara Falls
Day 8 Visit Downtown
