how to prove family size

My mom has written an invitation letter for my mexican husband to visit canada but I just read online that they want evidence of family size to make sure that they are financially able to cover all of his expenses while he is there? I have a copy of her tax assessment from last year showing income but...

My question - How does she prove family size?

What about the "tax return" (sorry don't know the proper term), where it shows the person filing the income tax, and person's dependents?
