Hi, I have work experience from 2 Sep 2019 - 31 Aug 2021, will this be considered as 2 years of work experience?

Do you have to work for 365 days exactly for it to be considered 1 year of experience?

It depends on your employment letter and paystub. it should be 30 hours/week for 52 weeks to be considered as 1-year work experience.

So if I started working on 2 September, which is a Wednesday and worked for 30hrs till 7 September, a Tuesday, then it would be counted as 1 week right?

yes. The most important is your employment letter, If your manager said you work 1 week for 30 hours so it will be 1 week.
