Is there any way to know how many applications are submitted? Or a way to know if the number of applicants now are higher this time?

Unlikely any visitor information is available to the general public real time so maybe the only non scientific way to judge could be if the average processing times for applications from any any country go up or down at any point.

Visa applications take as long as they take so even having such information would be of little use.
