Why wouldn't you?

Unless you claimed 50 points for arranged employment with current employer, nothing holds you back.

No, I am not claming those 50 points.
I am asking because I am changing in between process and during the work histroy check I will not be in that company anymore but in different company which they do not have information of.

So?

Nothing about a PR application is based on current or future aspects of your life ( with the sole exception of those who claim 50/200 points for arranged employment).

Your application is based on your history (work, education, etc), not on your current or future status.

If there is no specific mention from IRCC about this, you shouldn't be assuming.

As I said, nothing prevents you from switching employers or simply quitting your job at any point during the application process.

Alright man, thanks :)
