I've a question.
I've been sponsored with a PNP from a company and I got 1 year work permit.
I applied in April for my PR and in November for an open work permit. My work permit visa is already expired on 4th of February, but I can stay in Canada and working because I applied for the open work permit...

Now my question is: I would like to go out of Canada for a couple of months, but I'm still waiting for either open work permit and/or PR.
Can I then wait my documents from outside?
I also have to quit my job to be able to have 2 months "holiday", if I quit my job does it effect on my PR process?

Why you are making yourself in trouble if you are planning to travel outside Canada?
As your work permit already expired. You can't leave the country until you receive your open work permit. Plus for travel you need to have multiple visa stamped and make sure its not expired. Only visa is required for Port of entry. If you are planning outside and when you come back they will see your valid work permit visa and for sure they will ask you about your legal document which is your new work permit. If you don't have that then you are in trouble.

And planning to go for a holiday not for a week or so but for whole 2 months while your PR process going on is not the right decision.

Ok,I didn't mention all the story:
I'm a chef and I won a competition here in Canada. Thanks to that a magazine sponsored me to compete for them in Vegas: that will be a huge event and I've flight ticket and 1 week paid in an hotel...
Someone told me that if I go out I will be able to come back only as a tourist until my PR will come. So I planned a long trip to visit my family and take the time to get my PR ready. But maybe if my PR arrive and I'm outside of Canada, maybe some officer can give me trouble when I'll come back.
