Girlfriend from Mexico might get refused for vague itinerary. Does adding a document through the webform increase processing time ?

Hello!

I'm trying to get my girlfriend from Mexico to come visit me for 2 weeks.

We have completed all the form

For "purpose of visit" we simply wrote "Here to visit my boyfriend" and we said it would be from April 14 to April 28 (but we did not provide any specific flights)
We provided bank statements from my bank account as she earns no money, I myself just have about 1.5k on the bank account but all we're doing is staying home and eating pasta. We also provided pics of us together in Mexico to show proof of relationship, as well as a screenshot of our cheesy conversations. She entered her parents infos, her national ID card as well as her university where she's currently studying. But all we did was listing the university and program she was doing, not provided any document as proof.

After reading about it online, we realize we might be light on proof of ties to her home country and light on the itinerary purposes. I did not realize when making the visa it needed that much explanations since the website is very vague about it. April 14th is coming soon, she already gave her biometrics. I'm wondering if adding maybe an explanation document through the webform with proof she's REALLY attending her college and maybe describing in detail what we plan to do (mainly just staying home lol) is worth it ? Or would that delay the whole thing.
Secondary question would be : Are visitor visas generally refused ? Or am I being paranoid by reading refusal stories online because success stories tend to be shared less. Thanks for reading!
