Getting married and moving to Canada permanently

Hello,
I am an American-born U.S. citizen and am engaged to a Canadian-born Canada citizen. Our goal is to get married in 2018 and for me to move to Canada to live together. I am wondering what is the best way to accomplish this. My fiance would likely be sponsoring me through the spousal sponsorship program. From what I've read there seems to be at least a couple different ways to go about the process, namely "Inland" and "Outland" applications. What are the differences and advantages between the two? Is one easier than the other?

When we get married, I also plan on adopting my fiance's last name. Will this complicate the immigration process? Would I need to change my name on all my US documents (Passport, Driver's License, SS Card, etc.) before starting my immigration application?
