FSW, regarding working experience

Dear all,

I have about 5 years experience as a teaching assistant (2008-2013) under NOC-4012.

Since last May (for 6months now) I am working as an assistant professor under NOC-4011.

Shall I create an EE application with 5 years experience as a teaching assistant as a primary job, and don't mention anything about being an assistant professor now?

or Shall I wait for more 6months to complete a one-year experience as an assistant professor and apply with it as a primary job?

I am targeting to look for assistant professor (NOC 4011) job in Canada. Will it affect if I created my EE profile with the teaching assistant (NOC 4012) as my primary job?

If I were you, I'd create a profile using only 4012 as it already gives you maximum points. You can put 4011 in personal history once you receive ITA and start filling out the application.
If you want to mention 4011 in work history it's fine. You don't need to wait for another 6 month. You already have over 5 years of experience in total.
Just keep in mind you need to provide reference letter for all the jobs in work history section, whereas no reference is needed for jobs in personal history

Once you become a PR you can work in any profession you want, 4011 or 4012, no restriction
