1: Is it renewable or is it absolute that you must leave at the end of the two years? (and are you free to enter as a regular (UK) visitor under the normal visitor rules?)

2: Can you get a Canadian driver's licence with a SV or can you drive for more than 6 months on your UK licence? Or are you stuck after 6 months?

3: Is there a minimum time that your sponsor must have held their PR status to be able to sponsor you for a SV?

4: Can you apply for PR during the time you are in Canada under a SV?

Just thought of another one:

The application asks for proof of relationship between sponsor (me) and applicant (my father). My parents cheaped-out when I was born and only got the short version of my birth certificate so my parents are not named on it. My father is named on my marriage certificate, is that sufficient even though he wasn't even at my wedding?

You can apply to extend the stay before expiry of the SV.

If you have a valid licence from your home country, you will probably be able to use this to drive in Canada for a short period after you arrive. Check with your provincial or territorial government for details. If you plan to use a foreign driver’s licence in Canada, you should get an International Driving Permit (IDP) in your home country. An IDP will give you a translation of your licence into French and English.
3: Is there a minimum time that your sponsor must have held their PR status to be able to sponsor you for a SV?
No, but he should have Job, earning to proof that he can financially support. Medical insurance for 100,000 is required. Which may cost from 2700$-5000$ depending on individual personal health and age etc.

4: Can you apply for PR during the time you are in Canada under a SV?
Yes you can process your PR while you are in Canada.

In my sponsorship case i had a birth certificate attached but they still asked for additional documents to proof the relationship i.e. marriage certificates, educational certificates where father name is being shown or any other govt issue IDs where father name is mentioned.

Thanks for taking the time to reply. I think the only document I have with his name as well as mine is my marriage certificate, and as he wasn't actually there, I'm not sureit will count for much. I think I can probably request the full one (I hope!)..

I'm in BC so he can drive for a maximum of 6 months on his UK licence (generally). I wasn't sure if it was a flat 6 months or the length of the visa.

With my personal experience, very easy to get extension of visa. Extension duration depends on how much you ask ( 1, 2 years) but they will not extend visa beyond the expiry of the passport.
