Incase the visa application is being held by the embassy, will this be notified in the VFS tracking status or will it still show under processing?

it will show " Your application is been processed at the Canadian Embassy" until whatever decition has been made....

if that is what your are asking because its difficult to undestand what you asked...

What I meant was suppose the application processing is held or paused by the embassy for some reason. Will the embassy notify us, if it is being held?

How you know that the process is paused by CIC ?

If they want any additional document , you will get notified by a letter / call or MY CIC ( online ) and same will happen if they want an interview .

And i don't think embassy pauses anyone's file without any specific reason as it can effect the processing time mentioned on their website.
