Express Entry Employment queries

Hi there :)
I am new to this forum and I am interested in immigrating to Canada under the Express Entry program.
I am confused about the employment rules and have so many questions, I really hope some of you guys can help me.

First problem I am having is to find my NOK, I am a senior motion graphic designer that has been working in London full time
for the past 6 years and the reference number that seems to match my situation more closely is the following: 5241 Graphic designers and illustrators.
However I am a bit puzzled by the Employment Requirements for this role, as it seems that to be considered part of that NOK group
I must have an university degree or diploma in graphic arts (that unfortunately is not the case for me as I studied something completely
different and then switched profession later on)
Do you think it's going to be an issue, while applying for PR, that I don't hold an university degree or diploma in computer graphics?

Moreover when completing my employment section on the EE page it asks me to list a date of when I graduated and I was ready to do this profession.
Again, I haven't studied for my profession so which date should I put? The first day of my motion graphic job?

And finally, I read everywhere on the forum about Work experience on EE versus Personal experience full disclosure after ITA and just wanted
to triple check that it's ok to only list the jobs I can get references for (and can give me points for the NOK I need) in EE and then list everything else
after my ITA for the PR application, or is it unwise to do so and best to list all work experiences in EE as well?

Sorry I know that's a lot of questions but mainly I am so confused about this personal experience thingy :eek: and why it can be different than EE... hope someone can help me !
