I am sure you have read these below requirements from CIC for self employed:
"if the applicant is self-employed, articles of incorporation or other evidence of business ownership, evidence of self-employment income, and documentation from third-party individuals indicating the service provided along with payment details (self-declared main duties or affidavits are not acceptable proof of self-employed work experience)."
I was self-employed (really freelance, as I didn't own the business I worked at) for part of my first year in Canada. I provided my NoA, a reference from the owner of the business (if I had owned the business I would have got references from some of my clients), copies of my invoices to the business and paychecks in return.
