Employment record/ reference letters

Currently self-employed but going to be working for an employer and no longer self-employed in Canada.
I've prepared Employment record/ reference letters and need to know if I can sign my own records as am the current boss! Have also got counter signature of accountant but is this enough?

PS- my wife and I are both and the only directors, can we sign each others forms, along with the counter signature of accountant as well?
PPS- We are going for Atlantic Pilot, am I to assume this is Provincial Nomination?
