Employment details for really old jobs not related to my NOC

As a SAP Finance consultant, I created my EE profile under NOC 2171 (Information systems analysts and consultants). I have been in my current organization as a business analyst for 6 years (matching my NOC), but for 5 years before that I did a lot of jobs here and there, not related to this NOC. I checked the Express Entry Profile I submitted nearly one year ago, and I had only entered three jobs (not all my odd jobs). Two of these were in pure finance domain. These jobs were more than 6 years ago. They are the reason for my concern. I do have all the documents related to joining and leaving - covering my experience. It will be tremendous amount of work to get job responsibilities. I don't think company HR will be able to provide this info. I will have to find my managers but they have left those organizations too. I don't see how they will be able to provide company ID or business cards to prove they worked there. Also the responsibilities just will not match my NOC. I don't think I got any extra points for these jobs either. I really wish I had not entered them in my EE profile at all. But now that I have, any idea on how to handle this?

To summarize, given that I have one steady job related to my NOC for 6 years now,
1) How does one get job responsibilities for jobs held more than 6 years ago?
2) Does the fact that these old jobs are not even related to my NOC mean that I still have to submit responsibilities?
