How likely is it that CIC will contact tge employers which provided reference letters?
If they do, would it be by phone or e-mail? If by phone, would they even attempt to find someone who speaka their language to make the call?
What if the company no longer exists?

Cases have been reported of CIC contacting former (and current) employers of PR applicants both in and out of Canada. Based on what I've read here they can either call, email or walk in to those companies if they feel like confirming that the applicant was actually employed there. If the company no longer exists than you shouldn't have provided an employment letter from that specific company because you could not possibly (legally?) have access to their letterhead and stuff. Instead, you should provide an LOE stating that the company no longer exists. Hope this helps!

If your CRS score is affected by that particular employment then you must provide proof of it. If the employer declines to provide you with a letter then try contacting former co-workers who can write a letter testifying that you were indeed employed there in the specified time frame, attach your pay slips for the same period of time and gather as much evidence as you can of employment to attach to your application along with an LOE. It's a long shot but its either that or removing that experience from your EE profile.
If this is previous to ITA then your CRS score will be affected and you'll just have to wait for a round that reaches your score, if post ITA, removing the experience is not an option (again, if you claimed points for it) and you will have to either decline the ITA or provide the evidence above mentioned and hope for the best.
