ELSS/skilled worker questions

So I am about to start a year of work through the Young Professional visa. Was hoping to apply for PNP next year to work towards a PR.
The work Ill be doing is in hospitality (skill level B as Ill be a supervisor). I have been looking in to the BC PNP requirements and have a couple of questions. For the Skilled worker entry it says
1. "This category is open to workers with post-secondary education or training and employment experience in a skilled occupation"
I dont have any post secondary education but will be doing 1month of training for this job + have hospitality background/few months of supervising prior to this job. Assuming that counts?
2. "Have at least two years of full-time (or full-time equivalent) work experience" Does it have to be consecutive 2 years? I did 1 year on a working hoilday 2015-2016 in BC. Would that count?
3. I probably wont have enough points for the Skilled worker category + dont have time to do a full year of work before I would apply, so was hoping I can apply in the ELSS category either as a supervisor or do my 1 year of supervisor for the YP and then step down to be a server when I apply for the PNP, would that work or would they claim that I am "too skilled" for the ELSS?

Sorry if these are stupid questions. Just trying to understand all these different visas and find some loopholes...
