Education gap of 1 year 10 monts(is it a problem) visa changes

Hi everybody

MY profile is as below:

2008:- 10th with 72%
2010:- 12th with 64%
2013:- BBA with 65%

I have gap from may 2013 to till now,I worked in some good Engineering college as Back-end Executive for 6 months (but for cash). Now That college is ready to provide me work experience certificate from January 2014 to till now but I don't have any salary slips. So please guide me if I should apply for Humber college project management course or not.Or should I go for New Zealand or Australia.

And can I change course after reaching Canada from 1 year course to 2 year course
