For the education and work history sections, should I just list the jobs/qualifications I want to claim points for, or do I need to list everything? Thanks.

Yes you should list the experience and education you want to claim points for. When you receive ITA, you will be asked to upload proof of those entries. Some people exclude certain work experiences due to trouble getting reference letters, pay slips, etc. to support it in the application. However, all history should be reported in personal history whether you intend to claim the points or not.
