OK, so I was researching some things and got to thinking. If I am a dual citizen of Canada and the US, am I able to have a passport from each country? I currently have my US passport and will be obtaining my Canadian one soon... will they make me hand in my US passport??

Nobody will make you hand in your US passport. The US does not forbid dual and neither does Canada. As a US citizen, you should always use your US passport to enter and leave the US and as a Canadian you should use your Canadian passport to enter and leave Canada, ideally, although they are not as strict about it as the US. This means you carry both passports when you travel.
