I am an American, moving to Canada and marrying a Canadian citizen. If we have a kid will they be a dual citizen since I am an American citizen?

yes, a US citizen who lives outside of the US and who has lived in the us for more than 5 years since the age of 14 is eligible to pass us citizenship to their children born abroad. you will have to apply for their us citizenship after birth.
