I met my girlfriend in New Zealand in My 2015. She is French citizen PR in Quebec since 2014.
She was on working holiday visa and I was on student visa. We lived together in Christchurch, New Zealand for 6 months till she had to leave.
She visited again in February and is currently with me. Since my New Zealand visa ends this month, we plan to leave together on the 29th of February. Me back to India, and she will be back in Quebec after a month in Australia.

We are hoping to get back together in Quebec so that we can continue our relationship.

It looks like I am not eligible for express entry. We are looking at the possibility of her sponsoring me.
Our main obstacle seems to be that we haven't lived together for 1 whole year and also, we have been in a flatting situation where we don't have much to show other than bank transaction records of us paying rent to the lease holder.

Will our relationship qualify in front of the immigration?
Will it help if I join her in Quebec on a visitor visa?

We are looking for any suggestions that might help.

If you are referring to applying as common-law, no, you do not qualify. You have to live together a full consecutive year. You either have to get married and apply as a married couple or find a way to have either you live with her for a consecutive year or for her to live with you.

Agreed with the above. Your relationship does not qualify for sponsorship. You'll either need to get married or live together for a year continuously before applying.
