Do my bank statements have to be from the last "three months" of activity from my wife's account to include along with the rest of the tourist visa application form? or can it just be from the last month??

It's not something mandatory so I think you can go with just 1 month.

For the "proof of sufficient funds" for my wife's application, we included 1 month statement of my bank account and just a letter from her job.

She got her multiple entry visa.
