Difference of 3 types of Chinese for Interview?

Hi all,
I am filling out form IMM 0008 and under 4b, there is Chinese; Chinese, Yue & Chinese Yuh. If my spouse prefers an interview in Cantonese, should the choice be Chinese Yue? I just have never seen Yue or Yuh used to describe dialects before. I have tried looking in the detailed guide and there is no guidance on this.
