In a nutshell.
Waiting for PR Family Class application, UK applicant.
Partner is moving back to Canada in Dec, wants me to go and wait for the PR
decision there.
Got excited and booked a flight in December returning in June (5 months later exact)

A wall of worry just hit me, the border agent might refuse entry because the date of the return flight is so far away and they'll know I have a PR application pending.

Any comments or thoughts?

Your PR application should have no effect on admissibility into Canada as visitor. Just answer the border officer truthfully if it comes up. IIRC with UK passport you can have 6 month visa free stay, so as long as you can provide proof of connection back in UK (a return flight is a strong plus) and enough money to support yourself. you should have no problem.

You should be fine. Carry proof of the PR app and proof of finances. You are not moving to or coming to live in Canada; you are just visiting your partner while the PR app processes. Don't carry more than a few bags like a regular visitor.

See, I live in Japan. I've just told my work not to renew my visa for the new year, we used my visa ending as the right time to leave and go to Canada. Knowing I wouldn't be working, I saved up lots of money to see me by so I can be a tourist for a while.
We thought it would be better to stay together and me not work, than be apart for months.
I'm flying to the UK for Christmas and then flying on to Canada. I haven't lived in the UK for 6 years and the only "ties" I have are my amazing family (who we are flying back to see for a huge party in the summer - my return flight)
