Yes - you can do that as long as your husband gives written permission for your child to be relocated to Canada. Also, your husband will have to complete the medical and also provide police certificates in order for your application to be approved.

Thank you. Does he need to provide details of his educational credential evaluation in that case?

No he doesn’t especially when he is not part of your application as a dependent.
Just curious as this may affect your application, (& forgive my asking) are you separated or divorced as it may come up in your application as to why and how your husband is not accompanying...
Please Ignore this question if you have added him to your family members section but not accompanying dependents... in this scenario he may as well be exempt from medical imo.
All the best

Also IRCC is fine as long as your husband gives clear consent for your child accompanying you to Canada for the purpose of permanent residency.

From IRCC Website
Custody issues: dependent children

Applicants who have included in their application children who are subject to custody orders must provide proof that they are allowed to remove the children from the area of jurisdiction of the court. The parent or legal guardian overseas must provide written consent for the child to travel to Canada for the purposes of becoming a permanent resident. A court order is acceptable in cases where that person is unwilling to provide consent.

In cases where the sponsor is not the legal parent of an applicant’s dependent child, the applicant must submit a completed “Declaration from non-accompanying parent/guardian for minors immigrating to Canada” form [IMM 5604 (PDF, 609 KB) (PDF, 609.23KB)] for each applicable child.

Then it is very simple. Add your spouse in immediate family members (or else can mention in dependents but not accompanying, it would slightly delay your current application processing but is way faster than doing a spousal sponsorship later, but you may choose the later in case your husband doesn't want to make his current employer suspicious or otherwise). Further, add your child as dependent accompanying you and add your husband's notarized and explicit consent for allowing processing of your child's PR application.
All the best!
