Is that the date on the diploma by default or the date you completed your last trimester as per your transcripts? I graduated more than a year after I finished school and would hate to lose points because of that. NOC 1121.

It is referring to the date you were officially awarded your diploma.

In most cases you don't have to fulfill the education requirements for your NOC unless you apply under the Federal Skilled Trades program. If you worked before your diploma and your duties match with your NOC you won't lose that experience. You can explain the exact situation though why you got your diploma granted later.

Answering your question, if you were legally eligible to perform the job, you should write the date when you started that job.
