Folks from looking at the EE tracking sheet it seems most applicant's have spouse's. This seems unfair as they can get extra points ?

Not really, they have 2 different ways of counting points for single applicants or those with partners.

If anything, people with Spouse have a disadvantage.......For singles, a total of 500 points are all in control of the applicant......for married applicants, the PA can only score a maximum of 460 points, while the spouse has to make up for the remaining 40. The disadvantage? I have a PhD, im married so i can get 140 for education, while a single person will get 150. For me, the remaining 10 points have to be covered by my spouse's education.
