I have completed my graduation in mechanical engineering in 2017 .After that i have done an internship course of 6 months in hvac which is related to mechanical nd right now i got offer letter from montreal college in supply chain management which is one year course with 1 year work permit
Can i do back to back 1 year course nd get 5 year visa

No ....maximum length for a work permit is 3 years...no matter you do 2 years of study or more
