I have applied for temporary visitor visa to Canada to visit my gf of few months. I am mexican. Hoping for few month visa to live with her and will travel to Toronto once I get visa. I wish to arrive with my dog. Will meet all requirements for shots. My question is this: will dog hurt my chances with immigration at the border because they will think I plan to stay longer than a visit? I don't see any posts about people bringing pets on a temporary visa. thanks! ;D

Leave your dog at home. People who are coming to Toronto as tourists don't bring their pets. If you bring your dog, you're significantly increasing the chance that the immigration officer will think you have plans to remain in Canada long term and deny you entry.

That is not good idea to bring your dog. The officer wants something to not let you come in, good luck.
