If you have sent in her sponsorship paperwork and included an OWP for her, she would be on implied status, until her OWP has been decided. This means she could, in theory continue studying (so long as her permit doesn't say it' can't be renewed). If you really want to just get a visitor visa to make yourself feel better then the purpose would be something along the lines of remaining in Canada with spouse while sponsorship application is decided. You can ask for 12 months for adequate time for a decision to be made. Include pay stubs or something of that nature to prove you can take care of your wife alone (without her working) for the duration of the stay.

The obvious answer to the background information would be yes. She has done at a minimum her study permit and the sponsorship application. I don't know if she has had more study permits or visitor visas, but be sure to include EVERYTHING.
