Chances of Visiting Visa - HELP!!!!

Hi Everyone, my boyfriend and I are living in Mexico right now and want to visit Canada. I'm Canadian and he is Mexican. I'm working and have a fairly good job and he is working here as well. Between the two of us we make about $2000-$2500 dollars a month which isn't much by western standards but we are doing pretty well for Mexican standards. We rent here but have a rental contract that we renew every year. We have a car so we do have some ownership here. We do not have any intentions to move to Canada, I am happy here and want to build my life here. We can't get a letter of invitation (my parents have sponsored people before and have had bad experiences and don't want to go through the mess again). We do plan on getting married but not for another few years. He has never left the country before and only want to visit for 2 weeks-a month. We keep about $1000 in the bank but obviously will have to save up more for the trip. Does anyone have any idea about what our chances are like to visit? My parents live there and I hate visiting home without my boyfriend, he has never met them so I would like them to get to know each other. What do you all think, what do our chances look like to be approved for visitor visa? ANY help is greatly appreciated!!! Is it better to apply under a multiple entry or single entry?

Also, I have been doing some research on what we need. It says that we can apply online and get our answer within a week, how do we submit our documents to them? ie. bank records, employment records,etc. are those scanned and emailed out, how does it work? thanks so much for any help you can offer!!!!
