I have applied for PR under CEC but now I got a message saying request for proof of funds to submit within 7 days. My work permit is expired so I have left canada after applying for my PR under CEC. Should I just submit a letter saying my profile is under CEC class or show funds(which will be tough to get with in a week). Please suggest

That's a tricky question because the CEC class requirement was designed for those living and working in Canada. This meant they would not have to show settlement funds because they are already there. That said, CEC is also applicable for those currently not in Canada. However, the need to show proof of funds to re-establish in Canada after PR would be a valid request. Since they asked for it, you will have to show some funds. If you were still in Canada and employed, just having a job would be enough of proof if they asked. But you are outside and I'm not sure if you are currently working in your home country. Unfortunately I have no suggestions other than gather up some funds to show or use your current employment to estimated savings from it.

Yeah if you were in Canada and working you wouldn’t need to show proof of funds. Why did you leave why didn’t you try to get a bridge open work permit or extension. It’s always good to try and stay in Canada even when your application is processing
