Over the years I have multiple passports with the same nationality. Under the question "Passports/Travel Documents (Multiple) (required)"
If you have a passport, you must provide a copy of:

• the page that shows your birth date and country of origin, and
• any pages with stamps, visas or markings.

My Questions do I need all the passport info pages and Visa copy or Only the current Valid passport info page and Visas to scan and upload . TIA

One more question: I have Bachelor and masters from Back home as well as Masters for Canada as well. I did ECA for both foreign degrees. I don't see they option that they are asking me to upload foreign degree ECA and documents. Do I only need to upload the Canadian Degree?

I would suggest uploading a single PDF document in this order: Canadian Masters - Foreign Masters Degree + ECA - Bachelors Degree + ECA - IELTS.
Upload everything you have. It's safe. You can compress PDF if there are lot of documents

i will suggest your upload all stamped pages including old passports. better to do that than to be sorry.
