I have worked in Canada from May 13 2014 to Apr 19 2015. It is 11 months and 7 days and I have ADP payslips and T4 to support this. Can I show it as 1 year experience to get some extra points and what are the documents required to prove Canadian work experience.

If you're aiming for CEC, i'm afraid the "validity" of this work experience is too old. It needs to have been acquired within the last 3 years.
And even if it was recent, unless you have another Canadian experience of 1-year minimum, you cannot claim this one only by itself, as it didn't reach the 12 months cycle.
