Can spouse's work history left empty after ITA?

My work history was filled up with NOC experience before ITA, but realized that CIC needs very specific employment details from each companies especially job description etc, can I move to personal history and remove from work history, does it impact the score or anything? Do I need to declare it with LOE?

You need to calculate if it affects the score. If spouses work experience is all foreign, it doesn't get any points anyway and can be moved.

Yup, it is foreign. So, do I need to explain it in LOE? Or just leave since it is not affecting the score and not the main applicant?

If you are doing any changes post ITA, you need to provide LOE.
