Can my wife get a visitor´s visa? We live in Colombia and I´m Canadian.

You can apply for a visitors visa for her but be prepared that she may be denied based on her plans being to stay in Canada permanently. If she is denied, you can file for PR for her right now and either wait until she gets it or you move to Canada sooner and she waits.

and what's the take usually? 50-50? We just want to get out of Colombia. Would a US visa be granted to her perhaps (as another option to get away for awhile) due to the fact that she is married to a canadian? They'd see that she probably would have no intention on staying in US as she already has a chance for Canada legaly. What do you think?

Being married to a Canadian affords her no special status in the U.S.
If you just want to get out of Colombia, I was going to suggest Brazil, but Canadians need visas for Brazil (Colombians don't). Argentina, maybe?
