We are comfortable, but it would kind of suck if she has to wait 2 or 3 months before she is allowed to work.

She obviously has her passports and all that stuff, and she has a beginner's drivers license (valid until 2018).

We're going to Service Canada tomorrow to apply for her SIN and medicare.

Your wife can get SIN right on the spot when you go to Service Canada. You go to your provincial service centre, (Ontario Service for example) for medical card.
 
PR and TR SIN's take about 5 minutes to get at Service Canada. Just tell her to bring her documents with her (identity, PR card / Work Permit).

Yup. The second she is out the door from Service Canada, she will have a SIN number in hand and can work right away.
