Can I use both my, and my parent's account for proof of funds?

You can use your parents' acct for proof of funds. Have them execute an affidavit of support stating that they will be responsible for all your expenses includingn tuition while you are in Canada.

I meant to use both mine and theirs, so that the expenses are paid by both.

You can use as many account of parents. Spouse; Siblings and even your close relatives.
All you need to give is affidavit of support and satisfy VO that why they sponsoring you.
I know about on person getting Student visa in 2012 by showing sponsorship from his father business partner.
In his case he showed over 20 year business partnership and Children of his partner were well settle abroad.
