I am a US citizen being sponsored by my Canadian citizen common law partner. I would like to stay in Canada while my PR application is being processed. I visit the US every couple months so I would never be in Canada for more than 6 months straight. So could I, for the most part, live in Canada (I can do my US job from here) and have the frequent trips to the US satisfy my visitor status?

Yes, you can but it is possible that an immigration officer will at some point start asking you if you are living in Canada on a visit visa and tell you that you really aren't supposed to stay in Canada more than 6/12 months if you are a visitor. If you get a Nexus card, your crossings should become a bit easier.
