Can I skip about new employment in experience?

I have resigned my job in June and will be joining a new employer in Aug. I will not be in a position to get a reference letter from them until some time. So, is it ok to skip mentioning about it in the experience field?

I have six years of experience, so if I skip, will it be considered as continuous employment since June?

Minimum one year of continuous work experience is required to qualify and claim points under FSW.
