You should be able to extend your stay/renew your student permit on the IRCC website online. You will upload all the relevant documents onto the site and you will pay the fees online. If you renew it before your current student permit expires I'd say you'd be fine.

That I understand, but I'm studying in Quebec and therefore need to renew my CAQ before renewing my student permit. My only concern is that I won't have time to do both in the span of 3 months, since I've been told that the study permit does take a while to be processed.
That is why I want to know if I would be able to go to the border and renew my study permit there.

Yes, as a Green Card holder, you can apply for a study permit at the border.
Note that as long as you apply to extend your study permit before your current permit expires, you will have Implied Status allowing you to continue your studies while the extension is processed.
