Can I put minimum work history or should I put everything?

Hi everyone,

I have a question regarding work history, which I understand is the one that requires specific documentation as proof.

- I had a part-time job in the US after graduation from 02/2015 - 06/2017 at 24 hours per week, which satisfies the minimum required (of 1560 hours).
- Then, I moved back to my homecountry and I have been working in a job of the same NOC category since 01/2018. However, it is very difficult to gather documentation from this job because once my supervisor learns I am hoping to move (even if it is not in the short term), she will most likely let me go, so it is very risky.

My question is, do I need to get the evidence from my last job? I understand the first one satisfies the minimum requirement, but the ending date is mid 2017, would such a gap get my application rejected? I am willing to run the risk, I just would like to know if it is necessary.
